This Momma’s review of Cooking with Trader Joe’s Easy Lunch Boxes

As you know, one of my biggest challenges in life is keeping myself healthy. As my boys get older, I realize that they too are on this journey with me. I’m finding that personally, I feel the best when I eat a paleo diet (staying away from grains, dairy, and processed sugar). While I haven’t yet tried this diet for my boys, I do have suspicions that they would benefit from this style of eating (mainly Cole and his eczema).

My boys are picky eaters and I’m no stranger to presentation to trick my boys into eating. I have been a long fan of bento style meals and have even played around with Muffin Tin Style meals for them. I also pack my own lunch for my 3 12 hour shifts I work outside of the home each week.

I got really excited when I saw some tweets about a new book addressing some of these very issues.

When asked if I wanted the opportunity to review this book I jumped at it!!!

I was able to look at a e-version of this book and found many things!!

The pictures and snippets from real mom’s in this book motivated me and helped me to realize I struggle with some of the same things other moms deal with.

I’m not sure if my boys (any of them, even the husband) would try some of these recipes (but I thought they looked really good).

I liked that some recipes were labeled as Gluten free and vegan for reference.

And my favorite thing about this book (and a reason it’s on my christmas list) is that it inspired me!!!

I have a firm belief that a cookbook should provide not only perfect recipes to follow, but also a jumping point to create new recipes. (Maybe this is the newfound “paleo chef” in me but I’m getting braver at adapting recipes to fit my dietary needs!!)

I’m also a big fan of the Easy Lunchbox System (having looked at it online- not owning my own system yet). As my oldest will be in all day kindergarten next year, I have a feeling that these boxes will become staples in our cabinet.o here to find out more about this book and here about the lunchbox systems.
